Cooked Jicama

I agree with Marie Finch about using jicama in stir fries. I would never 
have thought to put jicama in a stir fry until my sister-in-law did it. I 
was amazed at how well it went with the rest of the veggies. It stays 
crunchy the same way water chestnuts do, and adds a nice contrast to the 
dish.
