Freezing Lentils/Cheese substitues

Yes it is absolutely fine to freeze cooked lentils. there is no loss in
fact when you reheat them you may find that they are easier to digest.
As far as cheese substitutes go, a good quality nutritional yeast such
as Red Star does provide a nice cheesey flavour. There is a great
cookbook called the Uncheese Cookbook.
