Nutritional Yeast and Pumpkin Pie

For Kris Hildrum regarding nutritional yeast: Have you tried PCC? I have
in the past purchased nutritional yeast in bulk from them at the Ravenna
store, I believe. You also might try the nutrition center in Fred Meyer.

In last month's PCC newsletter, they published a recipe for Mori-Nu Lite
Pumpkin Pie. I made it this week, and it came out great. I simply poured
the "filling" into the pie pan--used no crust at all--and it set well
enough that I can remove a slice at a time still intact.

Mori-Nu Lite Pumpkin Pie

1 1/2 (12.3 oz each) packages of Mori-Nu Lite Extra-Firm tofu
2 cups cooked pumpkin (can used canned)
2/3 cup sweetener of choice
1 tsp vanilla
1 1/2 tsp ground cinnamon
3/4 tsp ground ginger
1/4 tsp ground nutmeg
1/8 tsp ground cloves

Drain tofu and blend in a food processor or blender until smooth. Add
the remaining ingredients and blend well. Pour into a 9" pie pan. Bake
in a preheated 350 degree F oven for approximately 1 hour. Filling will
be soft, but will firm up as it chills. Chill and serve.

Makes 1 pie (8 servings). Per serving: 122 calories, 4 g protein, 1 g
fat, 26 g carbohydrate, 49 mg sodium, 0 mg cholesterol.
