Fried Green Tomatoes

For erica in nh - This is from "Vegetarian Times Complete Cookbook" with
the following comment:
In the south green tomatoes are traditionally fried in lard or bacon
grease. Here, the results are excellent with no frying.

FRIED GREEN TOMATOES Serves 8

1/2 cup cornmeal
1/2 cup unbleached white flour
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
4 large green tomatoes, horizontally cut into 1/2-inch-thick slices
grated Parmesan cheese (optional)

Preheat the oven to 400F. Combine the cornmeal, flour, salt and pepper in a
flat dish; set aside. Lightly coat a baking sheet with nonstick cooking
spray.

Dip each tomato slice in cool water, dredge in the cornmeal-flour mixture,
and place in a single layer on the baking sheet. Bake 15 minutes, turn the
slices over, sprinkle with the Parmesan, and bake 5 minutes more. Serve at
once.

Per Sv: 72 cal; 2g prot; 0.1g fat; 15g carb; 141mg sod; 2g fiber; 0mg chol;
(optional ingredients are not included in this count.)

Hope this will smell as good as your Mother's recipe and taste even better.
