Food Processors

Karen,
I have a fairly cheap food processor (can't remember the name at the
moment--it's one I got at Walmart) and have been quite happy with it. I
really like it for chopping/slicing vegies, but have recently discovered
the many uses for the lowfat extra firm silken tofu. You can whiz it
around in the processor for a few minutes until it's as smooth and creamy
as any thick pudding, then use it in pie fillings, for pudding, in
vegetable dip, or in place of ricotta cheese, etc. I also make a wonderful
sorbet by tossing in frozen strawberries, pineapple chunks and juice, and
sometimes even a banana. It comes out a little firmer than soft-serve ice
cream, and everyone who tries it loves it. My food processor is the only
gadget besides the toaster that I leave out on the countertop for
convenience. I wouldn't be without one!
