Take along food

For Anne who is looking for dishes that are easy to take along to prepare       
later.  One of my favorites is Mexican Rice.                                    

Mexican Rice                                                                    
2 cups rice                                                                     
1 can black beans, rinsed, drained                                              
1 can corn, drained                                                             
1 1/2 cups salsa (12 oz bottle)                                                 
Cook rice per directions.  Add beans, corn, and salsa.  This is great hot or    
cold.  Also goes nicely rolled into a tortilla.
