Orange Mock Chicken Curry

One of my favourite TVP meals.  You may adjust spices to taste.  I use a lot
more than this recipe calls for.

                        Orange Mock Chicken Curry

  50      grams         Textured soy protein -- Large Chunks or strips
   2      cups          Water
   1      large         Onion -- chopped
   6      stalks        Celery -- chopped
   2      tablespoons   curry powder
   1      tablespoon    vegetarian bouillon
   1      teaspoon      cumin
     1/2  cup           pineapple chunks in water -- drained
   1      can           mandarin oranges in light syrup
   3      cups          brown rice, cooked
     1/4  teaspoon      red pepper flakes -- more or less to taste

In a large skillet on High heat, add water, onion,  celery, spices, and
boullion.  Bring to a boil.  Turn heat to simmer, then add TVP.

Simmer for 15 minutes, or until TVP is soft. You may need to add more water
to ensure there is enough sauce.

Add pineapple and mandarin orange slices. Stir lightly, taking care not to
crush the orange segments.

Serve over brown rice - I like Brown Basmati.  This dish is even better as
leftovers.
