triglycerides

I have been following Dean Ornish's program for 4 years.  Recently we
were in Greece and Turkey and ate a tremendous amount of bread and
pasta.   When we returned we had blood tests and our triglycerides were
418 and 351 respectively.  Any suggestions as to what to do without the
carbohydrates.  Recipes using low glycemic carbs would be appreciated.
