L&R burgers

At a vegetarian club dinner this won first prize. They're pretty good. 

Lentil Rice Burgers (this makes a lot.)

2 cups cooked brown rice
3 cups cooked lentils
1 cup quick oatmeal (uncooked)
cooking spray
1/2 green pepper, chopped
1/2 large onion, chopped
2-3 cloves garlic, minced (optional)
6-8 fresh basil leaves, chopped
1 tsp of salt or to taste

Mix first 3 ingredients tother. Lightly psray skillet with cooking spray and
saute green pepper and onion until soft, about 5 minutes or so. Mix into
lentil rice comboination and form into patties. Saute in a nonstick skillet
lightly coated with cooking spray. Brown and serve with catsup, BBQ sauce  or
following recipe for tomato-vegt sauce.

Tomato-Vegt Sauce

1/2 large onion, chopped
1/2 green pepper, chopped
Cooking spray
1 cup diced yellow squash
one-14oz can diced tomatoes or 2 cups fresh tomatoes, diced
2 cans tomato sauce
1 medium tomato, chopped
1 tsp Italian spice
6 fresh basil leaves, chopped

Coat a skillet lightly with cooking spray and saute onion and pepper. Add
reminder of ingredients and simmer for as long as possible. 
Serve over Lentil Rice Burgers or potatoes, or pasta, or whatever you wish.
