Better Beef and Macaroni

In this fast-paced era, ground beef recipes are very popular, especially
those made with mixes like Hamburger Helper.  However, these packets of
pasta, flour, and seasoning are very overpriced and loaded with addatives,
not to mention the nutritional undesirables in the meatt.  Last Night I
made a version from scratch with tvp and elbow macaroni.  It was delicious.

1 onion, sliced into thin rings
1 cup tvp granules, rehydrated with 1 cup boiling water and 2 tablespoons
steak sauce
2 cups uncooked elbow macaroni
1/4 cupunbleached flour
2 cups water
1 cup water or low-fat or non-fat soy milk

1. Place the onion and tvp in a 2-1/2 quart microwave casserole with lid.
Cover and cook on high until the onion is soft, about five minutes.

2.  Add the remaining ingredients and stir to blend.

3. Cover and cook on high until the pasta is tender, about ten minutes.  

4. Remove and check for doneness.  Add a little more water or soy milk if
the sauce is too thick
.  Season with your favorite herbs or non-fat soy Parmesan if desired.
Serves four.
