Somebody requested an easy brownie recipe. Grating the zucchini is the

   2 cups grated zucchini
     1/2 cup mashed ripe banana
   2 teaspoons vanilla extract
   2 cups unbleached all-purpose flour
     3/4 cup sugar
1/3 cup carob powder (or cocoa)
   1 1/2 teaspoons baking soda
   1 teaspoon salt
                        confectioner's sugar -- sifted

Preheat oven to 350 degrees F.
In a large bowl, combine zucchini, banana, vanilla, and 1 tablespoon water.
In a medium bowl, stir together flour, sugar, carob powder or cocoa, baking
soda, and salt. Add dry ingredients to wet ingredients and mix until well
blended. Batter will be very stiff. Spread in a 9 by 13-inch baking dish,
either nonstick or lightly sprayed with nonstick spray. Bake until a
toothpick inserted in the center comes out clean, about 35 minutes. Cool.
Dust lightly with sifted confectioner's sugar before slicing.
They can also be frosted with nonfat cream cheese frosting - following recipe.
