couscous

>>Jane wonders:
>>Also, how does cous cous compare to say rice, pasta and potatoes as a good
and healthy >>accompaniment to salads/hot meals?

Couscous is pasta, tiny pasta. Usually made from durum flour, sometimes
made from whole wheat flour.
I like pasta as much as anyone, but remember, it is basically flour and
water, this makes paste! Little if any real food value.
I recommend you try bulghar wheat. It can be used in similar ways, but it is
actually wheat kernels, less processed than couscous, the "germ" and fiber
is all intact.
Just my opinion,
