granola bars

Ooh! I hope someone can help me, please!

Over a year ago I copied a recipe from this list for a wonderful, chewy granola bar. Even though I made the recipe many, many times and SWORE I would never misplace it.......I did. (It's always the way, isn't it?)

I believe it had 1 1/2 cups of oats, prune puree or mashed banana for the oil replacement (the author didn't like using applesauce). There was also dried fruit like dates and apricots. I couldn't seem to find it in the archives, so if anyone can help I'd GREATLY appreciate it. (And I will also copy it into my favourite recipe book where it will firmly remain.)

In the meantime, I tried this recipe for a p**nut butter substitute and could not believe how delicious it was. This is from "Get the Fat Out" and comes highly recommended:

Garbanzo Nut Butter
4 cups cooked chickpeas
2 Tbsp cornstarch
1/3 cup frozen applejuice concentrate, thawed (I didn't have any so I used a scant 1/3 cup sugar and 1/3 cup water)
1 Tbsp vanilla extract
1 Tbsp cinnamon
1 1/2 cups cooking liquid from beans (I used the liquid from canned beans)

Drain the beans and save the liquid. Roast the beans on a cookie sheet, 350F for 1- 1 1/2 hours. Grind in a processor or blender.

Blend the cornstarch, apple juice concentrate, vanilla and cinnamon in a saucepan. Add the bean liquid and heat, stirring until thickened. Combine with the ground chickpeas to form a peanut butter consistancy. Store in the refrigerator.
