For those interested in rice cooking, I'm in the Department of Nutrition
at UNC-CH and we just experimented in the lab with different types of
rice, instant, par-boiled, brown, etc. Proportions: 2:1 2 cups of water
for 1 cup of rice. Bring water and rice to boil, cover and simmer for
~20-25min for brown rice. The time is less for white rice. Par-boiled
rice is rice that has been partially cooked and then packaged for sale,
and therefore takes less time to cook. Usually one cup of uncooked rice
yields 3 cups of cooked rice. It was neat to cook all the different
types of rice and taste test.
