No, I'm sure Aztecs didn't have baker's chocolate! When a recipe calls for
1 square, I use 3 Tbsps unsweetened cocoa powder and 1 Tbsp of fat sub.
(ie: applesauce or plain yoghurt). If the mixture is a bit dry, I add a
touch of water or skim milk to thin it out.
(I wonder if this is what the Aztecs did?)
