For those of you discussing whether one should ease into an Ornish-type diet
or go "cold-tofu", I remembered reading about this very subject in the
intro to one of my favorite cookbooks ("New Vegetarian Cuisine" by Linda
Rosenweig.)
Ornish himself is quoted as recommending the cold tofu approach; as he says,
"You're more likely to feel a big difference if you make immediate and
comprehensive changes in your diet."
The logic is that if you ease into it, you won't notice the changes, and may
not be as motivated to stick with it. I did it gradually and didn't notice
any spectacular difference in the way I felt, but was highly committed to
making the switch (and have stuck with it for 4 years and counting.) I
suppose it's a matter of different strokes for different folks.
