My roommate who is not into low fat anything, loves these.
Oat Bran & Banana Muffins (vegan)
1 1/4 c. all purpose flour
1 c. oat bran
1/2 c. sugar
1 tbsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
3/4 c. (rice/soy) milk
1/4 c. applesauce
1 tsp. vanilla
2 really really ripe bananas, peeled, chopped
Preheat oven to 400 degrees. Combine first 6 ingredients in a large bowl.
Whisk milk, applesauce, and vanilla to blend in medium bowl. Add milk
mixture to dry ingredients, stirring until just combined. Mix in bananas.
Divide batter among twelve muffin cups. Bake until toothpick inserted into
center of muffins comes out clean, about 20 minutes. Transfer to rack to
cool. Serve warm or at room temp.
