Here's a quick and easy way to make a family supper with bountiful summer
vegetables:
Into a covered saucepan--
3 medium zucchini, chopped
2 large tomatoes, chopped (or use 1 1/2 cup canned)
1 bell pepper, any color, chopped
a few sliced mushrooms (optional
1 medium onion, chopped
several cloves garlic, minced
1 teaspoon dried basil, or 1/4 cup fresh chopper
1/2 teaspoon dried oregano or 1 tablespoon fresh
1/2 teaspoon red pepper flakes (optional)
freshly ground black pepper
Cover and let cook for about 30 minutes while you prepare some rice or
pasta.
