Cooking Black Beans

  1              pound  dried black beans -- (2 cups)
  2        tablespoons  olive oil
  1              large  onion -- diced
  3                     garlic cloves -- minced
  2        tablespoons  toasted -- ground cumin
  1         tablespoon  salt -- or to taste

about 4 1/2 cups cooked beans

1. Pick over the beans to remove any foreign objects. Wash the beans and soak them in water for at least 6 hours or overnight, changing the water several times.

2. Heat the oil in a large heavy pot over low heat. Add the onion and garlic and cook, stirring, for 5 minutes, until the onion has wilted.

3. Drain the beans and add them to the onion and garlic, along with enough water to cover by 2 inches. Add the cumin and bring to a boil. Reduce heat to low and simmer, uncovered, for 3 hours or longer, until the beans are very tender. Stir the beans from time to time and make sure that there is enough liquid to cover the beans. Add salt during the last half hour of cooking.
