 Taken from "Food" by Susan Powter: 
Sort through black beans and throw out any little 
rocks.  Then rinse 1/2 cup black beans and drain.  Add 2 
cups liquid to the beans in a saucepan and bring to a boil.  Lower to a 
simmer and cook for one hour and 20 minutes or until tender.  Yields 
1-1/3 cup cooked black beans.
