Coconut Extracts

I love the flavor of coconut added to Thai curries, but it's so high
in fat.  I've seen "lite" coconut milk in cans, but after reading the
ingredient list it sounds like it's just coconut milk diluted with
water.  Has anyone cooked with it and found that it's really more than
than, or has anyone located a coconut extract that works well in
recipes.
