Peachy Keen Bread

This "bread" could be a snack, a dessert, or a coffee cake.  Whichever way 
you serve it, it's delicious!  The recipe is made with Splenda (heat stable 
sugar substitute), but regular granulated sugar can be used as well.  
Calories, however, are calculated for Splenda.  btw - this comes with my home 
tested personal seal of approval. :-)

PEACHY-KEEN BREAD

1 3/4 cups flour
3/4 cup granulated Splenda
4 1/2 tsp baking powder
3/4 tsp salt
1 1/2 tsp cinnamon
1 1/2 cups rolled oats (uncooked)
2/3 cup skim milk
2 egg whites
1/2 cup applesauce
4 peaches, peeled and sliced

Combine dry ingredients in a medium sized bowl.  In another bowl, combine 
milk, egg whites, applesauce.  Stir into dry ingredients just until 
moistened.  Do not overmix.

Pour into lightly sprayed 8x8 baking pan.  Arrange sliced peaches over top 
the batter.  Bake at 375 degrees for 40 - 45 minutes, or until top is lightly 
brown.

Serve slightly warm with a dollop of fat free whipped topping of your choice.
