beets, juice

Hi,

I have been saving the juices leftover from my beets and was wondering what the most optimal storage is. I have been collecting it in a glass jar in the refrigerator but noticed that a white film has collected on the surface. Can this just be skimmed away or is it necessary to dispose of the juice (which i did)? Is there a better way to store it (maybe i should add some salt)?

Also does anyone have any good recipes which uses beet juice? I've thought about trying it as an addition to broths or drinks or as a base with (or in place of) water for cooking couscous or other grains, but haven't gotten around to testing anything out yet.
