                           Ginger-Soy Marinade

--------  ------------  --------------------------------
     1/4  cup           apple cider vinegar
   2      tablespoons   reduced-sodium soy sauce
   2                    green onions -- chopped
   1      tablespoon    grated gingerroot
     1/4  cup           frozen orange juice concentrate
   2      tablespoons   fresh lemon juice

Mix all the ingredients together in a small bowl. Add a pound of
vegetables.  Marinate for at least six hours, stirring occasionally. Broil
or grill until done, basting occasionally with the leftover marinade.
Serves 6.
