fava-puree recipe

 I know spring has come to Manhattan when fresh fava beans are available.
 (We are generally produce-deprived here in New York city.) I can only get
 them for three weeks of the year, so when I find them, I buy them--even if
 I have to trash my planned dinner for the night. This is a very simple way
 to prepare them, very classically Italian, so I'm told.
 
 2 lbs. fresh fava beans (in pods)
 1 yellow onion, chopped coarsely
 6 cloves garlic, peeled
 salt and pepper to taste
 
 Shell the beans--it's time-consuming (but worth it). Place the beans,
 garlic, and onion in a saucepan with enough water just to cover. Bring to
 a boil; turn down the heat and simmer until the beans are tender, about
 15-20 minutes. Pour the whole thing into a food processor or blender and
 puree. If it seems watery, put the puree back into the saucepan and heat
 again until some of the excess water has boiled off. Season with salt and
 pepper. Serve with toasted pita chips or crackers.
