indian-pea-puree recipe

 SPICED PEA PUDDING   (side dish)
 
 1/2 lb yellow or green split dried peas
 1 tsp whole cumin seeds , 1 tsp turmeric, 1/2 tsp ground cinnammon
 1/2 tsp chilli powder, 6 whole cloves (or 1/2 tsp ground)
 1/2 tsp grated nutmeg,  2 tsp 'lite' soy sauce

 Wash the peas well and discard any discoloured ones. Put them in a
 large saucepan with water and bring quickly to the boil. reduce the
 heat and simmer, partially covered, until they have completely
 softened and are beginning to break down (the time taken will depend
 on how old they are). check the water frequently and add more as
 required.
 
 When the peas are almost done, gently heat the soy sauce and spices
 for a few minutes, stirring often.
 
 When the peas are cooked , drain if necessary and add the soy sauce
 and spices.
 
 Mash to a thick 'cream' , transfer to a hot dish and serve.
 
 These are good served with curries or even cold with a salad. Cold
 leftover s go quite hard and can be sliced and grilled on toast the
 next day (recommended).
 
 Of course - if you substituted the peas for lentils you have one quick
 way of making Dahl !
