Carrot Muffins

Ingredients:

2 1/2 cups all-purpose flour
1/2 cup soy flour
1 tsp. baking powder
1/2 tsp. baking soda
a dash of nutmeg
1 tsp. cloves
2 tsp. cinnamon
2 to 2 1/2 cups finely ground carrot
1 cup raisins
2 EnerG egg equivalents
1/4 cup applesauce
1/2 cup + 1 Tbs. molasses
1 cup orange juice

Directions:

In a large bowl, mix together the flours, spices, and carrot. 
Add the baking soda and baking
powder.  Stir in the orange juice, molasses, applesauce, and egg
replacers. Spray a large muffin tin
with vegetable cooking spray, pour in the mix. Bake in a preheated oven
at 400 degrees for 15 to 20 minutes,
or until golden brown.  Let cool on a wire rack.
