SWEET POTATO GNOCCHI

2 pounds sweet potatoes
1 cup whole wheat pastry flour
1/2 teaspoon salt
Boil potatoes and mash. Add salt and gradually add enough flour to obtain a
manageable dough. Roll inot 3/4" thick ropes. Cut into 3/4" pieces.
Make desigh on each with fork tines.
Boil 4 quarts of salted water, and cook gnocchi for about 10 minuttes. Drain.
Since sweet potatoes can be stringy, mash by passing through a ricer or
if mashing by hand chop first.
