"old standby" recipe

My roommate Storm has been a vegetarian for years now, and this is what
she makes when she doesn't feel like being creative:

Red Beans and Rice

1 cup rice
1 can kidney beans
1-2 onions, chopped
2-3 cloves garlic, chopped
2-3 T chili powder
to taste:  oregano, basil, crushed red pepper

Set rice to cook.  In water, sautee onions about 5 minutes.  Add garlic
and continue sauteeing.  When onions start to become soft, add chili
powder and other spices; stir in well.  Add kidney beans (undrained),
and cook 'til mixture is warm throughout.  Serve over rice, or mixed
together.

This recipe is perfectly complemented by a side of greens,
fresh-squeezed lemonade, and vlf cornbread, if you're so inclined.  I'll
post those recipes if anyone's interested.

Serves 2-3 people, and can be doubled or tripled easily (just double or
triple the ingredients).
