Hi Frank, I use millet in place of rice and couscous in many recipes.  It
makes a nice change.  My only caution is to make sure you cook it long
enough!  Some like it for breakfast in place of other cooked cereal
choices.  (options:  milk and brown sugar, butter, cooking fruit right in,
etc.)
	Millet is cooked as you would brown rice, covered, using a two to
one water ratio, for approximately 35-45 minutes.
