Veggie Saute

One of my favorite quick meals is this:

Veggie Saute

Saute one-half a chopped onion in broth/wine/balsamic vinegar.

Add 1-3 cloves crushed garlic.

Add 1+ cup chopped mushrooms.

Add 2 cups any chopped greens (spinach, swiss chard, thinly chopped broccoli, 
etc)

Add 1+ cups any yellow veggie (my fave is thinly chopped sw. potato or any 
winter squash, just be sure it is peeled and thinly chopped so that it will 
saute quickly).

Cover and simmer 15 mins.  Add broth as necessary, keeping water content just hi 
enough to steam contents.  Remove lid, add salt/pepper to taste and simmer to 
reduce liquid if necessary.

Serve hot over mashed potatoes, sliced steamed potatoes, rice, pasta, or 
whatever you prefer.

Very simple, very easy and very good.  Feel free to add anything you like such 
as tomatoes, tomato sauce, herbs, etc.
