Honey Oat-Bran Muffins

I hope you are enjoying the oat bran muffins sent in my last post.
Here is another recipe for Oat Bran Muffins taken from the book
Secrets of Fat Free Cooking By Sandra Woodruff

Honey Oat Bran Muffins

Yield: 12 muffins
1 cup oat bran
1 1/2 cups non fat buttermilk
1 1/2 cups whole wheat pastry flour
1 teaspoon baking soda
1/4 cup  honey
2 egg whites, lightly beaten
1/2 cup chopped dried apricots 
or prunes or raisins

1.	Combine the oat bran and buttermilk in a medium sized bowl.  Stir to mix
well, and set
	aside for 15 mins.
2.	Combine the flour and baking soda in a large bowl, and stir to mix well.
 Add the 
	oat bran mixture, honey, and egg whites and stir just until the dry
ingredients are
	moistened. Fold in the apricots or prunes or raisins.
3.	Coat muffin cups with cooking spray, and fill 3/4 full with the batter.
	Bake at 350 F for about 16 to 20 mins, or just until a wooden toothpick
inserted
	in the center of a muffin comes out clean.
4.	Remove the muffin tins from the oven, and allow them to sit for 5 mins
before removing 
	the muffins.  Serve warm or at room temperature.
	These are really yummy, I just baked these this weekend. Very easy to
make.
