Egg substitute

I never use eggs or oil in my pancakes.  I use tofu (lowfat silken) about
1/4 package and blend with 1/4 cup applesauce and what every liquid I use.
Sometimes I use soymilk, and sometime Orange Juice.   These are very light
pancakes.

1 1/4 cup floor(Whole Wheat, regular, some times I add flaked wheat, Oat
meal, or corn meal for part)
1 teaspoon salt  (I use a natural salt)
2 Tbs sugar or honey or what ever ( can cut the sugar put it won't brown to
good)
3 teaspoon of Baking powder
1 cup Orange Juice, Soy Drink, or what ever
1/4 cup applesauce
1/4 of silken light Tofu

Mix dry ingredients.  Blend all liquids in a blender.  Mix together dry and
liquids. Do not over mix.
I cook these in a non-stick pan. Medium to low   This morning I used
Soymilk, Cut floor by 1/4 cup and added 1/4 cup corn meal and a can of
drained corn.  Sometimes I add zest of Orange to Orange Juice and a teaspoon
of Orange extract.
