  Mexican Veggie Rollups
     This is the version that I eat at least weekly and truly love.  I take 
the ingredients in snack size zip lock bags and put it all together at the 
lunch table.
Fat Free Tortilla ( large ones with flavor are delicious and satisfying)
about 1/3 cup FF refried beans mixed with 1 TBSP chopped green chilies
shredded lettuce
chopped tomatoes
chopped red onion
chopped fresh cilantro
Salsa
Meat if desired

spread tortilla with beans and chilies.  On 1/2 of the tortilla, generously 
add lettuce, tomatoes, onion, cilantro and top with salsa.  Roll up as for a 
burrito and enjoy.

Italian Veggie roll ups
1/2 cup cooked white beans, mashed and seasoned with garlic
2 pepperoccini peppers, stemmed, seeded and chopped
shredded romaine lettuce
chopped tomatoes
Chopped Italian flat parsley
chopped red onion
chopped green pepper
4 black or green olives, sliced
shredded carrot
Marinara Sauce
Italian seasoning or fresh basil leaves

Spread the beans on a tortilla - I buy FF tomato-basil ones at the supermarket
Add veggies to half of tortilla.  Top with seasonings ( spices, salt, pepper, 
basil, garlic...whatever you like)  Add Marinara sauce and roll up like a 
burrito.  I like some Marinara on the side to dip the roll-up as I eat.   
Leftover broccoli is wonderful in this roll-up too.
