Recipe: Curry Gravy

Curry Gravy

2 Tablespoons cornstarch
2 teaspoons curry powder (homemade or commercial)
1 pint soy milk
chopped chives

Combine the cornstarch and curry powder in a small saucepan. 
Over medium heat, add the soy milk, stirring constantly. Bring to
 a boil, boil for 1 minute, still stirring, while gravy thickens.  
Serve over mashed potatoes, top with chives.
